Sesame Seed Bars

These sesame bars come together so easily, only require a handful of ingredients and make a wonderful light snack, breakfast bar for on the road or an easy lunchbox addition. They’re also a nice way to sneak calcium rich sesame seeds into your diet. Almonds are also a rich source of calcium and are rich in healthy fats and protein. Due to their high calcium content, these are great for our bones and are nourishing for both kids and adults. For a nut-free version, use pumpkin seeds in place of almonds. For a vegan version use maple syrup instead of honey.

Sesame Seed Bars

These sesame bars are super simple to make, require no baking and are great for lunchboxes!

Ingredients

  • 2 cups Sesame seeds
  • 1/2 cup Shredded coconut
  • 1/2 cup Almond meal
  • 1/2 cup Tahini
  • 1/4 cup Coconut oil Melted
  • 1/2 cup Honey
  • Pinch Salt
  • 1/2 Pod Vanilla bean Scraped out

Instructions

  • Line a 20cm baking tin with baking paper
  • In a large bowl combine the sesame seeds, coconut, almond meal and salt
  • Combine the melted coconut oil, honey, tahini and vanilla
  • Pour the wet ingredients into the dry and mix until combined
  • Pour into the lined tin
  • Pop into the freezer for about one hour or until set
  • Once set, remove and cut into bars
  • Store in a sealed container in the fridge
