This is a high protein bread I saw Lisa eating in the clinic and just had to make; it is now a family favourite! She has already posted it on our website with the Cauliflower soup recipe, but it is SO good it deserves a post all of it’s own. It is packed full of protein and fibre and will keep you full for hours. It makes a great snack, or part of breakfast, lunch or dinner – it is super moist and very versatile. THANK YOU LISA!!!
Ingredients
300g almond meal
15g desiccated coconut
40g linseeds (also known as flaxseeds)
1/4 tsp salt
1 1/2 tsp bicarbonate soda
5 eggs
50g coconut or olive oil
35g honey or rice malt syrup
15g apple cider vinegar
Method
- Preheat oven to 180°C and line a loaf pan with baking paper.
- In a food processor, blender or Thermomix, blend the almond meal and coconut until finely ground. Add linseeds, salt and bicarb and blitz quickly.
- Add remainder of ingredients and blend until combined. Pour into pan and bake for 45 mins until golden.
- Remove from the oven and allow to cool for 10 minutes or so, before turning out onto a cooling rack.
