Here is a decadent snack which I brought out at a dinner party the other night, which was loved by all. These Choc-Mint Almond Bars make a delicious healthy snack that can stay in the freezer and be enjoyed as a special treat.  The average scoop of ice-cream has 13 tsp of white sugar in it. This one you can enjoy guilt-free, whilst nourishing your body with calcium with almonds, antioxidants and magnesium from cacao and protein from maca, an amazing superfood.

What is maca?
Maca is an amazing superfood which is native to Peru. It is abundant in vitamins, minerals and antioxidants, containing similar substances to herbs such as green tea and Echinacea.  It was traditionally used to enhance strength and stamina and is a powerful adaptogen, meaning it helps buffer the body against the physiological impact of stress. Maca is also used to balance hormone function. Maca powder can easily be added to smoothies and baked foods to enhance their nutrient value.

Almond Layer Ingredients

1 cup almonds
1 cup raisins
Pinch of Himalayan crystal salt
1 tsp vanilla extract

Coconut Mint Layer Ingredients

2 tbsp melted coconut oil
1-2 drops Doterra Peppermint Oil
1/8 tsp stevia (optional)

Chocolate Layer Ingredients

2 tbsp melted cacao butter or coconut oil
2 tsbp cacao powder
1 tbsp maca powder (optional)
1 tbsp rice malt syrup or maple syrup

Method

To make the almond layer: Pulse the nuts in a food processor until they are crumbs. Add the rest of the ingredients and process until it all sticks together. Press into the bottom of a lined bread pan and set in the freezer.

To make the coconut mint layer: Whisk together the ingredients and leave aside to set a little. Once slightly solidified, spread the mixture onto the almond layer. Put back in the freezer until totally solid.

To make the chocolate layer: Whisk together all the ingredients until smooth. Pour on top of the solid coconut mint layer and put back in the freezer (or fridge) until hardened. Cut and serve, or store in the fridge.
