The ideal slice for lunch, dinner or a picnic!

This wonderful Spinach, Feta and Brown Rice Slice recipe was given to me by a beautiful friend of mine nine years ago. We still take it on pretty much every picnic we ever attend. It works brilliantly for dinner and the left overs are delicious cold for lunch. It is also an easy way to use up left over cooked rice.

Ingredients

1 packet of frozen spinach (thawed)*
1 scant cup of cooked medium grain brown rice**
3 eggs
1 big cup of diced feta
¼ tsp of nutmeg
Black pepper, to taste

*If using fresh spinach, use 2 bunches of English spinach, stalks cut off, washed and placed in a strainer. Pour boiling water over to wilt, squeeze out most of excess water when cooled and then chop finely.

Method
  1. Preheat over to 190°C.
  2. Combine all ingredients and pour into a greased ceramic baking dish.
  3. Flatten the top and cook for 25-30 minutes or until golden on top.

Enjoy this slice as a yummy lunch or serve it with a big salad, baked potatoes and/or some steamed veggies for dinner.
