Bone Booster Lemon and Coconut Bliss Balls

I am always looking for the perfect snack for my kids, something easy to pop into a container that is delicious and nutritious. One of my lovely patients gave me this recipe, and I have to confess we ate the first lot so fast I had to make a second batch the same day! These lemon and coconut bliss balls are super yummy and portable.

Figs are a great source of calcium, one that many people are unaware of. They are also a very alkaline food, so the calcium is very easily utilised by the body. Almonds are also a great source of calcium and are rich in healthy fats and protein. The addition of citrus (lemon or lime) adds alkalinity and the perfect ZING. The cinnamon is wonderful for helping stabilise blood sugars. Due to their high calcium content, these are great for our bones and are nourishing for both kids and adults. Best of all, they taste DELICIOUS!

Ingredients

8-10 (150g) dried figs (try to find preservative free ones, like the Macro Organic brand)
150g raw almonds
Zest of one lime or lemon
Juice of 1/2 lime or lemon
1 tsp ground cinnamon
1/4 to 1/3 cup (60-80ml) filtered water
1/2 vanilla bean scraped out
Coconut, for rolling the balls in

Method
  1. Grind all the ingredients (except the coconut) in a food processor or Thermomix (start with 60ml of water, and add a little extra if needed).
  2. Roll into balls and then roll through the coconut.
  3. Store in the fridge in a covered glass or stainless steel container, and enjoy.

This recipe can also be pressed into a baking pan to make a slice if preferred.
